"We received apple most from Æblerov then blended it with a blonde we brewed, 50/50, into Tokaji barrels. We decided to go with a straw blonde beer to compliment the juice and fermented the beer with an Abbey Ale yeast. The juice was unpasteurized so there was some refermentation once we blended the two in the barrels. It drinks nice and tart with a little bit of funk. " -Lan-xin Head-brewer at Warpigs.
