Collection: Sour Cellars
Sour Cellars was created in 2015 as an exploration of sour brewing techniques. The purpose was to try combinations of different mashes, wild yeast isolates, open-air cooling, spontaneous fermentation, long-term aging, and open fermentation to produce a wide variety of barrel-aged sour beers. Those barrel-aged beers could then be blended into truly unique beers.
