Cider & Smørrebrød

There is as much variety in ciders as there is in beer. On the one hand there are the dry spontaneously fermented apple and/or pair ciders that show typical notes of funk, overripe fruits and are rather dry. On the other hand, there are the sweet Irish/British ciders that show huge notes of apple candy and fruit sweetness. Generally, ciders scream summer and sun, and they work very well with lighter food choices. Pairing your dry cider with your favorite Smørrebrød works well. Neither is overpowering in taste the light sourness of the cider works well with the fresh produce and is balanced by the cleanliness of the bread.


Cider

Cider is traditionally made from apples, and can sit anywhere on the spectrum in terms of alcohol level. Ciders can be flat (tranquille) or effervescent, either natural or carbonated. A traditional cidre bouché is a naturally effervescent cider on lees whose lees have not been removed from the bottle and has undergone fermentation in the bottle.
