Geuze Mariage Parfait is an exceptional example of craftsmanship when it comes to blending Lambic beers. Only the finest three years old Lambics are selected to be accompanied by a small percentage of young lambic in a perfect marriage made in brewing heaven. At Boon, it’s all about balance, so in order to provide the Old Style Geuze Mariage Parfait with enough body to withstand the abundance of different flavours, the specially brewed Lambics have a high degree of fermentation resulting in an alcoholic content of 8% Alc.Vol.

Pour slowly in 2 dry flute glasses without disturbing the yeast sediment in the bottle and enjoy this epitome of traditional Lambic brewing. The end result is a refined combination containing the fruitiness of lime zest and tangerine, smooth vanilla, slightly tart, palate refreshing acidity and a warming mouthfeel. Boon Geuze Mariage Parfait is unsweetened, unfiltered and unpasteurized. To complete the perfect marriage, it is bottle conditioned and can be stored for up to 20 years. Brewed in Lembeek, the village that gave Lambic its name.

Spontanales & White Fish

Funky, bretty, lightly sour and vinous. Spontanales are a great alternative to a white wine. They pair greatly with asparagus and white fish. Spontanales while having a very distinct taste are light and don’t overpower any dish. They are great beers to share and let sit in the glass to develop over time. Thus, opt for spontanales when you are not in a rush.

Just like the sour ale, spontanale is the term that Mikkeller uses when brewing beers using the same method of spontaneous fermentation that is traditionally used in lambic. Since lambic is a regional specialty though, anyone brewing it outside of the Pajottenland has to call it something else.
