Chardonnay barrel fermented danish spelt saison aged on apricots.
Aged for 08 months.
"A light and airy grist that consists of a large amount of malted spelt was fermented and then aged in Chardonnay barrels for 8 months with our blend of saison yeast, wild yeast, and bacteria. It was then macerated on deliciously fresh and juicy French Bergeron apricots for an additional period of time. After the fruit maceration was completed, it was naturally conditioned in the bottle for 4 months prior to release."
