Barrel-aged Sour beer refermented with Peaches.
"For this year's batch (No. 7), the peaches once again came from Vogel Orchard in Fredericksburg, Texas. June Gold and Regal made up the majority of the peaches, along with Carored. We're pretty proud of the quality of the fruit we get from the Hill Country, and we're happy to have done the fruit justice in our opinion for 2020 分 桃 (Fēn Táo). Our process is quite simple as always. We take mature barrel aged beer and add the peaches, which we process in-house by hand. Processing involves removing the pit and gently crushing the meat of the fruit. The skins go into the fermentation too, both for their microflora and flavor contribution. We then let the fruit re-ferment in the beer total dryness to before naturally conditioning."
