Kettle Sour Saison.
"Through our Saesoner series we’ve been exploring different interpretations of the saison style. For the fifth installment in the series, we teamed up with our Danish friends from People Like Us to brew a kettle soured version.
We settled on a complex malt bill containing rye and spelt, with flaked varieties of wheat, oats, and barley to provide body and compliment the earthy, spicy and peppery notes provided by the classic Belgian WLP565 yeast strain.
A small whirlpool hop addition of Hallertau Blanc sits nicely alongside the fruity tartness created through the souring process, providing a pleasant balance to the earthier notes of the malt and yeast."
